Blanc de Blancs
The essence of Chardonnay from an exceptionnal vintage year
Our Blanc of Blancs is produced in small quantities in exceptional years only and fully expresses the superb calibre of great Chardonnay from the best crus of the Côte des Blancs. After 6 years of ageing in our cellars, remarkable minerality and low dosage make this an outstanding wine that can accompany a variety of flavoursome dishes including poultry and fish, or be served on its own to celebrate a special occasion. The blend of this Champagne is Chardonnay grapes which are 100% Grand Crus vines from three different vines; Chouilly, Avize and Le Mesnil-sur-Oger. The colour is bright and luminous and a very fine head when decanted. On the nose this champagne delivers notes of flowers, citrus fruit and white peaches, which is then rounded off with an aroma of honey. The palate is a lot livelier than the nose, remarkably refreshing and dynamic for the age. Floral notes run through the palate with a long, well rounded mineral finish.
Colour :Light gold, bright, fine, with abundant bubbles Nose: Vigourous, it is both open and intense, showing generosity with delicate and refined notes of hawthorn, mirabelle plum, white peach, almond and exotic fruits.

The purity of its aromatic character makes Blanc de Blancs 2008 the perfect epicurean aperitif, but it can also pair well with a variety of white fish, like turbot or john dory. Ideal with a wild sea bass with lemon butter, a pink peppercorn seasoned sea scallop carpaccio or lobster in a vanilla sauce.
Palate :The attack is precise, leading to an ample palate, with remarkable volume and a great depth. The white fruit and citrus notes are clean and focused, with a racy, chalky minerality. The finish is fine and delicate and offers rare length and aromatic concentration.
